Ingredients:
- 2 yellow onion
- 2 scallions
- dash garlic powder, cayenne, and chili powder (to your taste)
- 26 oz black beans cooked
- 2T southwest seasoning
- 4 oz tomato paste
- 1/2 c low sodium veggie stock
- optional toppings:
- corn chips or blue corn chips
- cheddar
- chopped avocado
- chipotle sour cream or plain sour cream
Directions:
- Dice onions and slice scallions (separate white and green)
- Drain beans over small bowl to reserve liquid
- Heat large skillet, drizzle with oil – add onions and whites of scallions (3-4 minutes)
- Add Southwest Spice
- Stir in tomato paste, garlic powder and chili + cayenne powder (season to taste)
- Stir in 1 1/2 c water, veggie stock or concentrate, beans and 1/4 c black bean liquid
- Boil and bring to medium heat, stir – about 5-8 minutes
- Taste, salt / pepper
